Pintxo of Morcilla with grilled Scallions and French Omelette

What are Pintxos? A typical snack of the Basque Country and Navarre (Spain), “pinchos” consist of small slices of bread upon which an ingredient or mixture of ingredients is placed and fastened with a toothpick, which gives the food its name “pincho”, meaning “spike.”

Ingredients for Pintxo of Morcilla with grilled Scallions and French Omelette, 2 people

  • Morcilla (blood sausage), 2;
  • Egg, 2;
  • Scallions, 2;
  • Bread, 1.

Preparation of Pintxo of Morcilla with grilled Scallions and French Omelette

- Fry the Morcilla with a little oil olive in a skillet over medium heat.

- Grill the Scallion with medium fire.

- Make a French omelette.

- Cut the tortilla of the same size of the bread, place two grilled Scallions above the Morcilla and fix them with a toothpick.
