'Egg'cellent Facts (infographic)

Facts about eggs along with a great Mayonnaise recipe.

On average, 182 eggs are consumed per person each year. An egg contains water, proteins, vitamins and minerals, salt and mono/polysaturated fats. Dealing with calories, one egg is the same of an orange.

Mayonnaise is probably one of the most popular sauces in the world. This home-made mayonnaise recipe can be made by hand or in a food processor going perfectly well with chicken, seafood, potato or chicken salad, as a spread on a sandwich, as a dip for fries. It takes:

  • 2 egg yolks;
  • 1/2 teaspoon salt;
  • 1 teaspoon Dijon mustard;
  • 1 tablespoon white wine vinegar or lemon juice;
  • 125ml light olive oil;
  • 125ml extra virgin olive oil;
  • sea salt and freshly ground black pepper.

Making Mayonnaise By Hand: whisk the egg yolk, salt, Dijon mustard and a 1/3 of the white wine vinegar or lemon juice together in a bowl. Gradually whisk in the olive oils a little at a time, until the mixture is thick and smooth. If it becomes too thick, then add a little more white wine vinegar or lemon juice. When all the oil has been added, gradually add the remaining white wine vinegar or lemon juice and mix thoroughly. Season with salt and pepper.

Making Mayonnaise using a Food Processor: put the egg yolk, salt, Dijon mustard and a 1/2 of the white wine vinegar or lemon juice together in a food processor and blend well. With the motor running, add the olive oils in a thin steady stream and blend until the mayonnaise thickens. Add the remaining white wine vinegar or lemon juice and mix thoroughly. Season with salt and pepper.
